Sancheoneo (mountain trout) is a freshwater fish of the salmonidae family in the order Salmoniformes, a cold-water species that lives in first-grade clean water areas. Its unique pattern (parr marks) appearing on the sides, resembling neatly drawn vertical dots with ink on thin hanji paper, is so beautiful that it is called the 'Queen of the Valley.' If you want to eat properly prepared sancheoneo sashimi and spicy stew, we recommend 'Myeongga' (CEO Im Yeon-jin) near Hwacheon Information Industry High School, not far from the festival site. It offers the best taste and fresh sashimi using only freshwater fish caught from Paroho Lake and Hwacheoncheon Stream.
